I need a recipe for a side dish to go with the fish dish I am making tonight. Any help? - Salad and a side dis?

I am making sole with a bruschetta topping. It's just typical bruschetta, nothing crazy or exciting, but I have no idea what I could make with it. ITALIAN VEGETABLE SIDE DISH





1 can green beans


1 can Italian style stewed tomatoes





Cook both vegetables separately. When ready to serve, mix both vegetables together for a delicious side dish.

SIDE DISH





3 c. water


5 bouillon cubes (beef or chicken)


1 1/2 c. seashell noodles


4 tbsp. butter





Bring to a boil in medium saucepan water and cubes. Add noodles. Cook as directed on noodle package (or approximately 10 minutes). But don't drain. Add butter and serve immediately.

KATHERINE'S VEGETABLE SIDE DISH





1 can string beans (Del Monte Blue Mountain, preferred)


1 lg. cucumber


1 med. onion


4 or 5 potatoes, boiled with skin to be peeled when room temp.





Dice onions small. Cucumbers, bite size. Potatoes, larger bite size.

WILTED LEAF LETTUCE





2 lg. bunches leaf lettuce


2 tsp. sugar


2 green onions, sliced


4 slices bacon


1/4 c. salad vinegar


2 tbsp. water


2 hard cooked eggs, quartered





Tear lettuce into bowl, season with salt and pepper. Add sugar and onions. Fry bacon crisp and crumble. Add vinegar and water to drippings, heat to boiling point. Pour over lettuce. Toss until wilted. Add bacon and garnish with quartered eggs.

COLESLAW





6 cups shredded cabbage


1/2 cup sugar


1 cup shredded carrots


1/2 teaspoon salt


1/4 teaspoon pepper


1/2 cup buttermilk





DRESSING:





2 tablespoons vinegar


1 cup Miracle Whip Salad Dressing


3 tablespoons onions, chopped





Add sugar, salt, pepper, and buttermilk to dressing. Pour dressing over cabbage mixture and mix well. Refrigerate at least 2 hours. Will keep for at least 1 week.





Serving Size: 12.

Hailee, you don't want to overpower the Sole, for a side I would keep it to maybe a light tossed salad, of a fennel salad with a dressing of, the juice of half a lemon a small drizzle of balsamic, little drizzle of EVOO, and just a light sprinkle of sea salt and freshly ground black pepper, just for taste. Remember always, when dressing a salad, you salad should not be swimming in the dressing, your just coating your salad.

How about a noodle and veggie side dish. Cooked noodles, Saute brocilli, onions, red sweet peppers together in a little Olive Oil with a bit of fresh chopped Basil, and maybe some Garlic and when limp or cooked to your liking, toss in the noodles and stir to heat thru.


Simple and easy and certainly colorful for the Sole you are making.
Parmesan Noodles





Ingredients:





* 8 ounces wide noodles


* 2 tablespoons butter or margarine


* 1/4 teaspoon garlic powder


* 1/4 cup grated Parmesan cheese


* 2 tablespoons minced fresh parsley





Directions:


Cook noodles according to package directions; drain. Place in a bowl. Immediately add remaining ingredients and toss well. Yield: 4 servings.
I like to serve corn fitters with fish. ! can of creamed corn 1 cup of corn meal 1 egg 1tsp baking powder pinch of salt mix. Drop a tablespoon of mixture in hot fry until golden flipping once. Make extra bruschetta topping to put on fitters
