Side dish recipe ideas?

Next sunday our church is going to be having a Thanksgiving/welcome dinner for our new pastor and were supposed to bring a side dish. I'm running blank on ideas. Does anyone have any good side dish suggestions? Please DON'T say potato salad cause somebody is already bringing that.Side dish recipe ideas?

Corn casserole

2 can corn

2 can creamed corn

butter pats throughout

breadcrumbs

2 eggs

cooking spray

Get out your casserole dish and a mixing bowl.

Spray the casserole dish with cooking spray

Mix all the corn, the eggs and 1/2 cup breadcrumbs together in a bowl.

Dump the entire bowl into the casserole dish and place pats of butter throughout. Cover the top with another 1/2 cup of breadcrumbs and cook 375 deg for 45 min to an hour, bring covered with tinfoil and wrapped in newspaper, it will stay hot until serving.
I've been searching high and low for a great (non creamy-baked-crumbed-give -you- heartburn-for-three-days) side dish for Thanksgiving dinner and I came across a recipe that I had tried and loved and it's perfect!

Arugula and Roasted Cauliflower Salad

2 med heads cauliflower cut in bite size florets

3T EVOO

3/4 tsp salt( 1/2 t for roasting use 1/4 in dressing)

1/4 t pepper

2 T champagne or white wine vinegar

1 T dijon mustard

1/3 c EVOO

2 5oz pkgs arugula

1 large red onion( I left this out)sliced thin

4 0z shaved parm

425 oven. Combine first 4, tossing to coat. Roast uncovered 30 to 35 mins stirring twice. Remove and let cool. Whisk dressing ingred. together. Toss all veg together and add dressing. Top with shaved parm. Serve this salad on a platter rather than in a bowl.

squash casserole

Two cups of cooked squash pressed through a colander or otherwise mashed or processed and left to cool

2 eggs

1 tbs. butter

1/2 cup milk

pepper and salt (I like some nutmeg in any squash dish)

1/2 cup bread crumbs

Preparation:

Beat eggs, butter, milk and squash and add seasoning. Pour into a buttered bake dish and sprinkle with the bread crumbs. Bake covered for 1/2 hour then uncover to brown lightly. Serve in the bake dish.

If there is some of the plain cooked squash left:

beat in an egg, seasoning, 1/2 cup milk and enough flour to make a soft batter. Cook in a hot frypan as you would pancakes.

cranberry relish cherry or lemon jello( substitute 1/4 to 1/2 cup of orange juice for the water ) dissolve it cool add grate/chopped fresh cranberries orange peel if you use a orange for juice. and mold chill Serve with mayo in center or side depending on your mold. If you don't want fresh cranberries you can use whole canned cranberries and stir in.
I am going to send you to my website, the first link offers side dishes that include creamy Parmesan orzo, three onion stuffing, or baked mashed potatoes with gouda cheese - to name a few:

The other link is to a variety of salads that include a broccoli/cauliflower chopped salad, napa cabbage salad or a raspberry jello salad (super simple and perfect with turkey), check out the other selections as well:

How about macaroni and cheese? Homemade mac and cheese rocks! But even boxed is pretty good especially when you add extra cheese and top it off with toasted bread crumbs - YUM! Baked beans are good, too. I personally like to use Bush's secret recipe ;-) straight from the can to the dish. You can bake them with a little bacon on top...who would know or even care, they're delicious. Have a great time at your dinner party...
