Just slice the zucchini long ways in lengths about 2 inches long then sautee it in a skillet till tender all the way through in olive oil and season with pepper and fresh lemon. Very easy and clean tasting. No fat and tastes great. Only takes a few minutes and clean up is a breeze.What's a really good, easy recipe for zucchini as a side dish?
Slice the long way 1/4 in to 1/2 in thick slices. Brush with mixture of Virgin olive oil, melted butter and soy sauce. Sprinkle with season salt and grill on BBQ or a stove top grill pan. Grill until you see pan marks on the zucchini. Do not over cook. Leave a little crunch to it( no mush).


Stewed tomato's with garlic and Italian seasoning butter and chunks of zucchini. Add sugar to your taste.
Saute sliced zucchini with onion and a little garlic in olive oil. Season with salt and pepper and if you'd like, a little Parmesan.

Someone else has probably done this recipe before, but this is the version that I made up:





Preheat the oven to 350 degrees.





Peel two or three zucchini and cut into julienne strips. Drain a small can of diced tomatoes thoroughly.





Mix together a cup of dry seasoned breadcrumbs (storebought Italian flavor works best) and half a cup of grated Parmesan cheese.





Sprinke the bottom of an 8x8 casserole dish with a third of the crumb mixture. Top with half the zucchini and diced tomatoes, then drizzle lightly with olive oil.





Repeat the crumb and zucchini-tomato layers, then top with the rest of the crumb mixture. Sprinkle with additional Parmesan, if desired.





Bake until tender and bubbly -- about 20-25 minutes.

Stuffed Zucchini





4 Small Zucchini


1 Bag of shredded Cheddar/Jack cheese


1/2 Onion, finely chopped


Garlic Powder


Pepper





Boil water in a pot, then lower the heat until the water comes to a simmer. Add zucchini, and cook until soft. Cut zucchini into halves and scoop insides into a bowl. Saute onion. Add onions, garlic powder, pepper, and cheese into the bowl with the zucchini insides. Mix it all up and return to the skins, and bake in oven for about 30 mins at 325.
zuccini fritters are delicious cant remember recipe soz but im sure they could be found on net
Most zucchini recipes are for entrees, rather than side dishes.





Slice fairly thin, maybe a quarter inch thick, dip the slices in milk/egg, then in crushed saltine crackers, then fry like green tomatoes.





Or cut them 3/8 inch thick, sprinkle them with oil, and grill on the barbecue.
Zucchini %26amp; Cheese ( Family Favorite.)





Cut Zucchini and onion. Put in water and boil until very soft. When the water boils almost all the way down, add white american cheese to the top until melted. (Provalone is also good.)





Stuffed Zucchini.


Cut Zucchini long ways in 2. scrap out center with a spoon. Fill with blue claw crab meat, sprinkle with ole bay. Top with Motsarella and bake until zucchini is tender.
ZUCCHINI PATTIES





1 medium zucchini


2 eggs


1/2 cup Parmesan


1/2 cup flour


salt


pepper


oil





Slice zucchini in half lengthwise, then thinly slice each. Mix eggs, flour, salt, pepper and cheese. Combine zucchini with mixture. Coat and mix well until pasty.


Heat oil in a pan and drop spoonfuls to fry. Turn when they've browned. Drain on paper towels.
I like to saute a sliced onion in olive oil , untill soft and then add my sliced zucchini and some sliced mushrooms.garlic ,salt pepper


or you can add a can of chopped tomatoes and simmer to your prefered tenderness.





Zucchini boats


cut in half and scoop out the seedy part.


fill with favorite meatloaf or veggie stuffing.bake for 45 min .350 oven
Slice it, steam it for 2 minutes, add salt and parmesean cheese.





Slice, put in a shallow baking dish with a little milk, cover with cheddar cheese and bake for 30 minutes.





Shread it and add to salads with a vinagrett dressing.
Zuccinni, tomato %26amp; onion pie





Chop all ingredients, put in shallow tray, top with some butter and homemade breadcrumbs , sprinkle some mixed herbs and bake in mod oven 15 min till crumbs are golden. You can add garlic too if you want.
Zucchini Gratin





2 tablespoons butter


6 medium zucchini, sliced


2 tablespoons chopped fresh tarragon or 2 teaspoons dried tarragon


1 1/4 cups grated parmesan cheese


1/2 cup milk


1/2 cup whipping cream


2 eggs


salt and pepper





1. Preheat oven to 350F degrees.


2. Butter 9 inch deep-dish pie plate.


3. Melt butter in heavy large skillet over medium-high heat.


4. Add zucchini, saute until golden, about 5 minutes.


5. Season with salt and pepper.


6. Layer half the zucchini in prepared dish.


7. Sprinkle half of tarragon and 1/2 cup cheese over.


8. Repeat layering with zucchini, tarragon and 1/2 cup cheese.


9. Combine milk, cream and eggs in small bowl.


10. Season with salt and pepper.


11. Pour custard mixture over zucchini.


12. Sprinkle remaining cheese over.


13. Bake until gratin is set in center, about 35 minutes.


14. Serve immediately.





Enjoy!
Use a little oil in a heavy skillet. Cut the zucchini in 1/4 rounds. You can also you yellow sqaush with this, it adds to the yumminess. Add them to a medium hot pan, Adds 1 rbsp of minced Garlic, and 1 can of diced tomatoes, (more if you have alot of zucchini) turn to very low heat and let simmer for about 8 minutes. They will be tender and delicious!!





PS.. I use delmonte zesty diced tomato's, it adds a nice kick if you like heat. (it has jalepenos)
I personally like to have mine steamed with onions and lots of butter.





I also like to put it in cornbread and have muffins on the side.
Easy Stir-Fried Zucchini





Julienne the zucchini (for looks, thinly sliced is okay). Stir fry in a bit of canola oil and toasted sesame oil until as tender as you like it. About 2-4 minutes. Sprinkle with sesame seeds, salt if desired and serve. Quick, easy and delicious.
Corn and Zucchini Medley








Ingredients


2 Tbsp. olive oil


2 cups chopped zucchini


1 1/2 cups fresh or frozen corn


4 sliced green onions


1 clove garlic, minced


1/2 tsp. Seasoned Salt


1 pinch freshly ground black pepper


2 Tbsp. Bacon Bacon鈩?br>

1/2 cup shredded Monterey Jack





Directions


Heat oil in large skillet over medium heat. Saute zucchini, corn, onion and garlic until crisp-tender. Season with Seasoned Salt and pepper. Spoon vegetables into serving bowl; sprinkle with Bacon Bacon鈩?and shredded cheese. Makes 5 servings.

Zucchini Gratin with Gruyere Cheese





ingredients:


2 pounds small zucchini, shredded on the large holes of a box grater


Salt


3 tablespoons unsalted butter


1 small shallot, minced


1/2 cup heavy cream


1/2 cup shredded Gruyere cheese (1 1/2 ounces)








directions


Preheat the broiler. Put the shredded zucchini in a large colander and toss with 1/2 teaspoon of salt. Let the zucchini stand for 5 minutes, then squeeze as much liquid out of the zucchini as possible.


In a large nonstick skillet, melt the butter. Add the minced shallot and cook over moderate heat until the shallot is softened, about 3 minutes. Add the shredded zucchini and cook over high heat, tossing, until the zucchini is just softened, about 2 minutes. Add the heavy cream and simmer until thickened, about 1 minute. Remove the zucchini from the heat and season with salt. Transfer the zucchini to a shallow baking dish. Scatter the Gruyere on top of the zucchini and broil 4 inches from the heat for 1 minute, or until the cheese topping is golden brown. Serve the zucchini gratin right away
peel the zucchini- and chop one onion, preferably a sweet onion like vidalia-- heat evoo in frying pan, add peeled and quartered zucchini and onion with garlic minced--sautee and simmer until zucchini is tender-- add 1 large can of chopped peeled tomatoes or if you have fresh, chop up about 3 whole tomatoes-boil to remove the skin first. after cooked refrigerate and then heat to serve sprinkle romano cheese on top....
Zucchini Patties





INGREDIENTS:





* 1 1/2 cup grated raw zucchini


* 2 tablespoons minced onion


* 1/4 cup grated Parmesan cheese


* 1/4 cup all-purpose flour


* 2 eggs


* 2 tablespoon mayonnaise


* 1/4 teaspoon oregano


* Salt and pepper to taste


* 1 tablespoons butter





PREPARATION:


Press excess moisture out of grated zucchini between paper towels. Mix together everything but butter to make the batter. Melt butter in skillet. Spoon batter (about 2 heaping tablespoons per patty) into skillet. Flatten lightly with spatula. Cook over medium heat until nicely browned on both sides. Serve plain or top with tomato sauce and grated cheese. Serves 4.
ZUCCHINI CASSEROLE





3 large zucchini (cubed with peel on)


1 large onion, peeled and chopped


16 oz. shredded cheese


1 can cream of celery soup


2 eggs (beaten)


2 tablespoons mayonaise


2 tablespoons sugar


3 cups bread crumbs


1 stick margerine, melted





Cook zucchini and onion in enough salted water to cover, just until slightly tender.


Drain and add next 5 ingredients and mix well. Pour 1/2 into 15 X 11 X 2 casserole. Stir margerine into bread crumbs and sprinkle 1/2 on first layer of zucchini mixture.





Repeat layers.





Bake at 350 degrees for 35 to 45 minutes
Chop it in slices and use them for dipping.
I do something similar to Lindsey but I use the grill. Just brush with olive or canola oil and grill over medium heat until it's as tender as you like it. I sometimes put my zucchini on the side, where it's cooler, while I cook my meat over more direct heat. Then they are done at about the same time. This also works with other summer squash, bell peppers, and eggplant.
I cut mine in half length ways. I put minced garlic on top. I then grill it on a gorge forman grill till the little dark grill lines are on it. Slice it into smaller pieces and serve. If you have no garlic, then you can always marinate the slices in Italian dressing. It turns out great!





Also, you can fry it.





You will need eggs, bread crumbs, Cajun seasoning, and zucchini. Simply cut the zucchini into slices width wise. Mix a small amount of the seasoning to the bread crumbs. (Too much will make it too salty). Dip it into the egg, then the bread crumbs. Place in a frying pan with a small amount of olive oil. You will want the oil to almost cover the zucchini. Brown on both sides, and serve. It's really good with ranch dip or alone. Try adding different seasonings to the bread crumbs for different taste!

fry if you are looking for something unhealthy. and put some yogurt crushed with fresh garlic and salt on top.





or even more simple and delic. cut into cubes. add salt pepper, oil of choice, even hot peppers. and cook in pan. add more veges if u wish
