I'm tired of the same old/same old.Do you have a side dish recipe for Thanksgiving that is different than the traditional fare?
LEMON-GARLIC VEGETABLES
1 lemon
5 tbsp. butter
1 tbsp. chopped garlic
1-1/2 cups baby carrots
1-1/2 c. red pearl onions, peeled*
1-1/2 c. cauliflower florets
1-1/2 c. broccoli florets
1/2 tsp. salt
1/8 tsp. freshly ground pepper
With vegetable peeler, remove outer layer of peel from lemon, avoiding bitter white pith beneath peel; place peel in small saucepan. Add butter and garlic. Heat over low heat until butter is melted; simmer 5 minutes. (Do not brown butter or garlic; remove from heat occasionally if necessary.) Remove from heat; let stand 15 minutes. Strain; discard lemon peel and garlic. Skim off any foam or particles from surface; let remaining particles settle to bottom. Pour off clear butter, discarding milky residue on bottom. Cover and refrigerate until ready to serve. (Butter can be prepared up to 3 days ahead.) Fill large saucepan half full with water; bring to a boil over medium heat. Add carrots; boil 5 minutes. Add peeled onions; boil 3 minutes. Add cauliflower and broccoli; boil 3 minutes or until vegetables are crisp-tender. Drain thoroughly. Run cold water over vegetables to stop cooking; drain well. (Vegetables can be prepared to this point up to 1 day ahead. Cover and refrigerate.) To serve, melt lemon-garlic butter in large skillet over medium heat. Add vegetables; cook 1 to 2 minutes or until heated through. (If vegetables have been refrigerated, cook 5 minutes or until heated through.) Sprinkle with salt and pepper. Makes 6 servings.
* NOTE: To peel pearl onions, place in boiling water and boil 3 minutes. Drain; rinse with cold water to cool. Cut off root end and squeeze opposite end (onion should pop right out of its skin).
ROASTED GREEN BEANS AND RED PEPPERS
3/4 pound green beans, trimmed
1 large red bell pepper, cut into strips
1 tablespoon extra-virgin olive oil
Salt and pepper to taste
Preheat oven to 500 F. Toss green beans and bell pepper with oil, salt and pepper to taste. Spread in an even layer on a rimmed baking sheet and roast at 500 F. until browned and tender, turning once halfway through cooking, about 10 minutes.Do you have a side dish recipe for Thanksgiving that is different than the traditional fare?
Thanksgiving Meatloaf
Ingredients-
2 1/2 pounds ground turkey
1 1/2 cups chicken-flavor stuffing mix
2 eggs
1/3 cup milk
Preparation-
Preheat oven to 350 degrees F (175 degrees C).
Mix together turkey, stuffing, eggs, and milk in a large bowl. Mixture will be lumpy. Spread mixture in 9x5 inch loaf pan.
Bake for 1 hour until temperature reads 165 degrees F in center of loaf.
Stuffed acorn squash
Cut small acorn squash in half and clean out seeds.
Stuff with stuffing mix, sauted celery and onions, pecans, and sage.
bake at 350 about one hour
Waldorf Salad
Take one each - red, yellow and green apple and slice into 3/4 inch square about 1/3 inch thick with skins on.
In mixing bowl add:
Lemon juice
diced celery
sliced red and green seedless grapes
walnuts
mayo
sugar
