Lemon wedges for garnish

1. Bring 12 inch of water to boil in 10-inches covered nonstick skillet. Add green beans; simmer, covered over medium low head until tender crisp, about 8 min. Drain in colander.

2. Heat oil in skillet over medium heat. Add shallots and sugar; cook until softened and golden, about 2 minx. Add salt, pepper and green bean. Cook, stirring until heated through, about 2 mins.

3. remove skillet from heat and stir in lemon zest and basil. Spoon onto serving plate. Garnish with lemon wedges, if desired and serve immediately.

This is my family's favorite recipe for green beans so I make it often and since we're lemon lovers I squeeze just a bit of the juice over the beans for an added zing.
I dont normally give this recipe out but its a major hit.

1 10 oz bag broccoli cuts

1 cup instant rice

1 jar cheese whiz

1 can chicken (near the tuna)(can used cut up chicken)

2 cans cream of chicken

shredded cheese

Follow directions on cooking broccoli. Cook your rice. Then in a large bowl mix broccoli, rice, chicken, cream of chicken and mix well. Add your seasonings. I usually use season all. Then pour into a 13x9 baking dish and cover with shredded cheese and bake in oven at 375 for about 30 mins.

Sweet Potato Casserole

I big can yams

I bag of big marshmallows

1/4 cup brown sugar

1/4 cup butter

Spray a baking casserole dish with a non stick spray. Drain your yams and add to dish cover with brown sugar and butter. Top with marshmallows and bake at 350 for 20 mins.
You are going to serve stuffing and gravy, aren't you??? We like Stove Top (chicken) so that we can have lots and lots of stuffing.

We always have deviled eggs too, and usually green beans.
Mac and Cheese

Get a box of Velveeta cheese, on the inside of the box top there is a really good recipe for homemade mac and cheese.

Really easy pasta, black pepper, milk, cheese, salt.
Old Fashioned Cornbread Dressing

1 pan baked cornbread, cooled

1 bunch celery, washed, trimmed, chopped

1 large loaf light bread (sandwich white bread)

1 teaspoon black pepper

1 teaspoon salt

4 to 6 eggs

1 teaspoon powdered sage

1 teaspoon poultry seasoning

coarsely chopped meat of 1 boiled chicken or fryer chicken

1 to 2 large onions, chopped

chicken or turkey stock and pan drippings in which the chicken or turkey was cooked, or 2 to 3 cans commercial chicken stock

With hands, crumble cornbread and light bread together. Add seasonings. Stir in eggs, chicken meat, onions, celery, and moisten with the chicken stock or drippings. Mixture will be soupy. If it is dry, add more chicken stock. Turn mixture into large, well-greased sheet cake pan or roasting pan. Bake in preheated 350 degree oven for about one hour to one and a half hours or until top of dressing is golden brown. If making giblet gravy, 1/2 to 3/4 cup of the dressing may be removed to stir into the giblet gravy to thicken it either before or after cooking, or at any time during the baking process.

Some members of our family liked to use squirrel meat in the place of chicken. If you have an avid hunter in the family, this is a way to make use of wild game.

Kansas Mash Potatoes

1 pound Yukon Golf Potatoes, peeled and quartered

Place potatoes in a large saucepan, and cover with water. Add a little salt and bring water to a boil over medium heat. Cook until tender but still firm. Drain and return to stove top over low heat for a minute or two to dry the potatoes.

Add to potatoes:

8 oz. softened cream cheese

1 cup sour cream

salt and pepper to salt

1/4 c soften butter.

Use a potato masher to mash until smooth.

These potatoes can be made ahead of time and kept warm in a crock pot, set on low. Just add 1-2 T of additional butter before serving if it seems dry.
Green bean casserole is always good. It doesn't seem to get made any other time? I wonder why...cause it is so good.
