I grew soo many zucchinis this summer...I can't give them away fast enough and I hate throwing them all in the compost pile. I need some new ideas. ThanxPlease...I need some easy recipes for zucchini as a side dish....?
I love zukes %26amp; have so many recipes. One of my faves is zuchinni pancakes (similar to potato pancakes). Another dish I like is pasta, zukes, ricotta cheese and walnuts. Here's one new fave:
Zucchini Cakes with Mushroom Ragout
1/2 of a medium zucchini, shredded (1 cup)
1 8-1/2 oz. pkg. corn muffin mix
1 cup shredded cheddar cheese (4 oz.)
1/4 cup milk
1 egg
1/4 tsp. cayenne pepper
12 oz. assorted mushrooms, quartered (4-1/2 cups)
1 cup drained bottled roasted red sweet peppers
Preheat oven to 400 degrees F. Lightly coat twelve 2-1/2-inch muffin cups with cooking spray; set aside.
In mixing bowl combine zucchini, muffin mix, cheese, milk, egg, and cayenne pepper; spoon evenly into prepared muffin cups. Bake for 11 to 14 minutes or until golden.
Meanwhile, heat 1 Tbsp. olive oil in large skillet over medium-high heat. Add mushrooms; cook 3 to 4 minutes or until tender, stirring occasionally. Season with salt and pepper. Place roasted peppers in blender. Cover; blend until nearly smooth. Arrange 3 cakes on each plate with some of the mushrooms and pepper sauce. Makes 4 servings.

Zuchinni Lemon Pancakes
1 pound zucchini, coarsely grated
1 tablespoon freshly chopped parsley
2 teaspoons chopped lemon zest
1/2 teaspoon chopped garlic
Salt to taste
Freshly ground black pepper, to taste
2 eggs
1/2 cup flour
1/2 cup olive oil
3 lemon wedges, for garnish
In a bowl combine grated zucchini, parsley, lemon zest and garlic. Season with salt and pepper. Stir in eggs and flour.
In a skillet heat 1/4 inch olive oil until it ripples. Spoon batter by tablespoons into skillet and flatten each mound into a 3 inch pancake. Cook pancakes for 1 minute on each side.
Remove with a slotted spatula to a paper towel lined baking sheet. Keep warm in a 250 degrees F oven while you continue to prepare remaining batter. Arrange pancakes on a platter and sprinkle with salt. Garnish with lemon wedges.Please...I need some easy recipes for zucchini as a side dish....?
Zucchini Parmesan Crisps

Cooking spray
2 medium zucchini (about 1 pound total)
1 tablespoon olive oil
1/4 cup freshly grated Parmesan (3/4-ounce)
1/4 cup plain dry bread crumbs
1/8 teaspoon salt
Freshly ground black pepper
Preheat the oven to 450 degrees F. Coat a baking sheet with cooking spray.
Slice the zucchini into 1/4-inch thick rounds. In a medium bowl, toss the zucchini with the oil. In a small bowl, combine the Parmesan, bread crumbs, salt, and a few turns of pepper. Dip each round into the Parmesan mixture, coating it evenly on both sides, pressing the coating on to stick, and place in a single layer on the prepared baking sheet.
Bake the zucchini rounds until browned and crisp, 25 to 30 minutes. Remove with spatula. Serve immediately.
serves 4 is easy and yummy!
I wish I had a big pile of zucchini! I love it! I take zucchini and carrots and cut them into matchsticks (maybe 1/4 in. x 2in.) and saute with garlic and butter salt and pepper and a little squirt of lemon. Or make stuffed zucchini with mushrooms, jack cheese, breadcrumbs, top with parmesan and brown. Cook zucchini whole, slice in 1/2 longways, saute butter, garlic, mushrooms, scooped out zucchini guts, add a little italian seasoning, add breadcrumbs, then cheese. Fill up zucchini shells with mixture top with parmesan and throw under the broiler to brown. This is my favorite zucchini recipe ever! You can add chicken if you want.
Zucchini Moons
2 small zucchini
1 ts butter
2 TB water
shake of salt
shake of pepper
2 ts grated parmesan
1. Cut zucchini into rounds about 1/4 '; thick. (If your child is doing the cutting,only allow him to use a plastic picnic nknife, and closely supervise his work. Also put a piece of colored tape on the handle of the safe end, and tell your child to keep the hand on the tape. Following these rules, chef Katzen believes kids as young as 3 can learn to cut)
2. Heat a large pan to medium-hot. Put zucchini, butter %26amp; water in the pan. Shake in salt %26amp; pepper to taste. Stir %26amp; cook approximately 5 minutes. Drain well. Sprinkle cheese on top %26amp; enjoy!
ZUCCHINNI CASSEROLE
1/4 c. chopped onion
4 c. sliced, peeled zucchinni
1 can. cream of chicken soup
1 8oz. pkg. herb-seasoned stuffing mix
1/2 c. butter or margarine, melted
1 c. sour cream
1 1/2 c. shredded cheddar cheese
Cook onion and zucchinni in boiling water for 5 min. or until tender; drain. In a bowl, combine soup, sour cream and cheese. Ina separate bowl, making stuffing according to pkg. directions; stir in butter or margarine. Spread half of the stuffing over the bottom of a baking dish; spoon on the zucchinni and the soup mixture. Top with remaining stuffing. Bake at 350 for 25-30 min. or until bubbling.
ZUCCHNNI BACON FRY
3 slices bacon, cubed
2 c. peeled, cubed zucchinni
dash salt and pepper
Fry cubed bacon until crisp; add zucchinni, salt and pepper to taste, cover and cook for 15-20 min. or until zucchinni is tender.

Make it like you would make eggplant parm,We had so many Zucchinis one year we even made zucchini bread. also slice it and saute it with olive oil and garlic and tomato and Parm cheese serve as a side dish You can freeze this.
I agree with zucchin bread. Also, you can slice them up, add some onions and mushrooms, butter, salt and pepper. Wrap in aluminum foil and cook on the grill or in the oven.

Another idea is to toss them with olive oil, season with salt and pepper and throw them on the grill.
Chocolate Chip Zucchini Bread Recipe
3 cups all-purpose flour
1/2 teaspoon baking powder
1 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 teaspoon baking soda
3 eggs
2 cups white sugar
1 cup vegetable oil
2 teaspoons vanilla extract
2 cups grated zucchini
1 cup chopped pecans
1 cup semisweet chocolate chips
1 tablespoon orange zest
Whipped cream, for serving
Zucchini ribbons, for serving
Preheat oven at 350 degrees F. Grease (2) 9 by 5-inch loaf pans.
Sift together flour, baking powder, salt, spices and baking soda.
In a large bowl, beat eggs until light and fluffy. Add sugar, and continue beating until well blended. Stir in oil, vanilla, zucchini, pecans, chocolate chips, and orange zest. Stir in sifted ingredients. Pour into prepared loaf pans.
Bake for 50 minutes, or until a skewer inserted in the middle comes out clean. Remove loaves from pans and cool. Chill before slicing. Serve with whipped cream and ribbons of zucchini.

Orange Zucchini Bread
2 cups grated zucchini
1 cup walnut or pecan pieces
1/3 cup fresh orange juice
Grated zest from 2 oranges
3 cups all-purpose flour
2 teaspoons baking powder
2 teaspoons cinnamon
1 teaspoon salt
3 eggs
1/2 cup vegetable oil
1 cup granulated sugar
1/2 cup brown sugar
2 teaspoons vanilla extract
Sift flour, baking powder, salt, and cinnamon into a large bowl.
In a separate bowl, beat the eggs just until mixed. Add the grated zucchini, orange juice, orange zest, sugars, oil and vanilla extract. Stir until combined. Add to the flour mixture and stir gently, only until combined. Do not overmix or bread will be heavy.
Lightly spoon mixture into prepared pans (buttered, floured, and lined with wax paper).
Bake at 350 degrees F for 55 to 60 minutes, or until tests done with a wooden pick.

Zucchini Bread
3 eggs, beaten
1 c. vegetable oil
2 c. sugar
2 c. zucchini, grated
2 tsp. vanilla
1 tsp. baking soda
½ tsp. baking powder
1 tsp. cinnamon
1 tsp. salt
½ c. pecans, chopped (optional)
3 c. AP flour
Grease and flour a 10” Dutch oven. In a large bowl, beat eggs, then add oil, sugar, zucchini, and vanilla; mix vigorously to cream together. Sift together flour, soda, baking powder, salt and cinnamon. Stir in flour until well combined then add optional nuts. Pour batter into Dutch oven. Bake at 325° with 7 coals under and 12 coals on top for 1 to 1 ¼ hours, until tooth pick inserted in the center comes out clean. You can also use 2 loaf pans for this recipe if you like.
Serves 12 to 16
Add about 2 Tbs. Orange zest to the batter about 1 orange. and you should have pretty close to what you are trying to make
