MISSISSIPPI POTATOES

8 c. potatoes, cooked and diced


1 c. mayonnaise


1 tsp. salt


1/2 tsp. pepper


1 lb. processed American cheese, diced


1/2 c. chopped onion


4-6 slices bacon, fried


1/2 c. green olives


1 14.5-oz can of Diced Tomatoes





Toss potatoes with mayonnaise, salt, pepper, cheese and onion. Place mixture in greased 9x13 inch pan. Sprinkle with crumbled bacon, olives, cheese and tomatoes. Bake at 325 degrees for 1 hour.





To add more zip, you can garnish the serving dish with some sliced jalapeno peppers.I need a side dish recipe that will just have people raving about how good it is.?
This is a cold side dish that you can have with your meal and/or as a desert.





Orange Creamsicle Salad





1 box of orange jello


1 box of instant vanilla pudding


1 box of vanilla tapioca pudding (cook and serve)


2 small cans of mandarin oranges


1 8 oz container of cool whip.


2 1/4 cup of water





Combine water, jello, puddings in pot stir well. Cook over medium heat until it comes to a full rolling boil. Cool at room temperature, when completely cool mix in mandarin oranges and fold in cool whip until well mixed. Chill well and then enjoy. Yummy





NOTE: EVEN THOUGH THIS IS COOKED THE VANILLA PUDDING MUST BE INSTANT AND THE VANILLA TAPIOCA PUDDING MUST BE THE COOK AND SERVE.





I usually double this recipe so there is enough.

PINEAPPLE AU GRATIN-


1 c. shredded cheese


3/4 cup. sugar


20 oz. pineapple chunks in juice


3 tbsp flour


1 package ritz crackers


1/2 stick margarine, melted


Drain pineapple, reserving 1/2 cup juice. Combine cheese, sugar and flour. Add pineaple juice and then pineapple. Crumble Ritz crackers on top. Spoon melted butter on top. Bake at 350 degrees for 20 minutes or until bubbly.





RICE AND BROCCOLI CASSEROLE-


Just mix together with out precooking.


10 oz. broccoli, thawed, not cooked


2 c. Minute Rice, uncooked (I use Success Rice)


1 can cream of celery soup


1 soup can water


8 oz. Cheez Whiz (I like to use more, we like ours really cheesy)


1/2 stick butter, melted


Spray the baking dish with a non stick spray.


Mix all ingredients together and put in the baking dish and bake for 30 minutes at 350'.
Loaded Baked Potato Casserole





Prep Time: 10 min Cook Time: 40 min Makes: 15 (1/2 cup) servings


Ingredients





* Crisco® Original No-Stick Cooking Spray


* 2 (12 fl. oz.) cans Evaporated Milk


* 2 cups water


* 6 tablespoons butter or margarine


* 3 (4.9 oz.) boxes Hungry Jack® Cheddar %26amp; Bacon Potatoes


* 2 cups sour cream


* 1/2 cup chopped chives or green onions


* 1 cup (4 oz.) shredded sharp Cheddar cheese





Directions





HEAT oven to 350°F. Spray a 13 x 9-inch baking pan with no-stick cooking spray.





COMBINE evaporated milk, water, butter, potato slices and sauce mix in a 5-quart pot. Cook over medium heat, just until mixture comes to a boil. Remove from heat. Stir in sour cream and chives or green onions. Pour into prepared pan. Sprinkle with cheese.





BAKE 40 minutes or until bubbly and golden brown.



Stuffed mushrooms.


Get the big mushrooms. Tear out the stems then rip them into small pieces, add bread crumbs, parmesan cheese, parsley, bit of garlic, basil and olive oil to soften it the stuff it all back into the musshroom and bake for about ten mintes on medium temp. They are the best and an italian recipe. And really healthy.
you can make an extremly good mashed potatoes... everyone loves mashed potatoes but it is very difficult to find or eat some home made mashed potoates that everyone loves.... or you can also have home made southern style mac and cheese.... never failes....
