Sometimes I make 2 or 3 veggies in place of a starchy side. Or a big salad. Or just some good artisan bread.
A quick side I make is to open cans of chick peas and kidney beans, rinse and drain and then combine with your favorite salad dressing (or your own, I use olive oil and vinegar). You can add celery and onion for crunch, as well as peppers, etc.
I love Polenta - try that sometime. Couscous is good and very quick and easy to prepare. Google both of these and you'll find tons of recipes.I'm getting tired of rice and potatoes. What are other starch recipes for side dishes?
I dunno if you have it where you are but ainsley harriott does some rissotto rice - onion and cheese flavour that is very very nice, about 99p a packet from my local sainsburys. Exceptionally nice as a side dish and equally good on it's own.

Why must they be starchy. How about a nice green bean casserole. Potato salad. Macaroni salad. Baked beans.Corn.Spinach . Salads. there are 100's of recipes that are easy for side dishes to compliment your main entree.
