1/2 cup sugar 16 oz. mandarin oranges
1 Tbsp flour 1 (20 oz.) pineapple chunks
1 1/4 Tsp salt 1 (10 oz.) crushed pineapple
3/4 cup + 2 tbsp pineapple 1 (4 oz.) whipped topping
juice 1/2 cup tiny marshmallows
1 egg beaten 1/2 cup coconut
1/2 Tbsp lemon juice
1 1/2 qts water
1/2 Tbsp oil
8 oz. Acini de Pepe
Combine sugar, flour and 2 tsp salt. Gradually stir in pineapple
juice and egg. Cook stirring until thickened. Add lemon juice and
cool. Boil water with remaining salt and oil. Add Acini de Pepe and
cook in rolling boil until done. Drain and rinse and drain again.
Cool. Combine egg mixture with Acine and mix thoroughly. Refrigerate
overnight in airtight container. Add remaining ingredients. Mix
thoroughly. Chill in airtight container. May be refrigerated up to l
week in airtight container. May also be frozen. Makes l2 servings.Need a good side dish recipe?
Cheesy Potato Casserole:
(Increase the Ingredients to serve the #of scouts at the function).
Ingredients:
2 eggs
2 medium potatoes, peeled and grated
1/2 cup chopped onion
1/4 cup dry bread crumbs
1/2 teaspoon salt
1/4 teaspoon pepper
3/4 cup shredded cheddar cheese
4 bacon strips, cooked and crumbled
Directions:
In a medium bowl, beat eggs. Stir in potatoes, onion, crumbs, salt and pepper. Pour into a greased 1-qt. baking dish. Bake, uncovered, at 350掳 for 30 minutes or until potatoes are tender. Top with cheese and bacon. Return to the oven for 5-7 minutes or until the cheese is melted. Yield: 2 servings.
Tater tot casserole Ingredients
1 (2 lb) bag frozen tater tots
1 lb ground beef
1 (8 ounce) can cheddar cheese soup
1/4 cup butter
1/2 (4 ounce) can milk
8 ounces shredded cheese
Directions
1preheat oven to 350.
2brown and drain hamburger meat.
3Line a casserole dish with frozen tater tots.
4pour hamburger over the tater tots.
5in a sauce pan mix soup, butter and milk till everything is mixed.
6pour soup mixture over hamburger.
7top with tater tots.
8cook in oven till tater tots are cooked (check the center).
9top with shredded cheese and put in oven till melted.
10remove and serve Hot.

Saut茅ed Corn Medley

16oz frozen corn or 2- 9oz frozen corn
Stalk celery
陆 red onion, chopped
1- plum tomato, chopped
1 TB olive oil
2 pats butter
1 teas salt
录 teas oregano leaves
录 teas chile powder
陆 cup half %26amp; half
Saute corn, onions, celery in olive oil and butter until soft. Add seasonings. Stir in cream %26amp; tomatoes. Let boil and cook %26amp; stir for 2 minutes.

Hash Brown Casserole
2# frozen hash brown potatoes- (I use the Ore-Ida cubed kind)
陆 cup butter, melted - (I adjust to less than 1/4cup (third stick))
1 tsp salt
1 can cream of chicken soup
2 cup medium grated cheddar cheese
1/2 cup chopped green onions
2 cup sour cream
Mix all ingredients together. Place in buttered 13 x 9 x 2 dish and bake at 350 for 55 minutes.
This one is super easy to make and really good.
Overnight Hashed Brown Potato Casserole (Cheese Potatoes)
Ingredients:
(8 servings)
2 lb Frozen hashed brown potatoes
1/4 lb Butter
1 pt Sour cream
1 can Mushroom soup
8 oz Cheddar cheese; shredded
1 Onion; grated or 1 T. instant minced onion
3/4 c Milk* (optional)
Instructions:
Cut butter into potatoes. Mix rest of ingredients together; pour over top of potatoes. Toss. *1/4 - 3/4 c. milk can be used in place of one-half of the sour cream. It will make a moister casserole, if desired. Bake in a 13x9'; pan at 350 for 1/2 hr covered and an additional 1/2 hr. uncovered. I have used Cheddar Cheese soup, but reduce the butter as it will be greasy with both. I also put additional shredded cheese on top during the second half hour of baking. Doubles well. Can be refrigerated overnight after mixing all together.
try deviled eggs! They always seem to be a big hit, at least at the pot lucks that I've been to. When I was a kid, I went to lots of pot lucks, but I know that I wasn't the only kid who wouldn't go if there weren't deviled eggs! this is a great site and it has many different recipes for deviled eggs so give it a try!
I found most places do not have corn.... get a 2 pound bag of frozen corn, add 1/2 stick butter to it, mircowave it for about 15 minutes on level 8.
Our church potlucks NEVER had corn till I started taking it. Now that is all I take.
