Side-dish recipes with corn and refried beans?

I have a cooking project I have to do today, and you have to make Southwestern food. I already have a main course, dessert, and a salad, but I need a side-dish. I was thinking something with corn, refried beans, maybe tomates and green chillies? Does anybody have any recipies using any of the above ingredients?

Mexican Fried Corn


* 2 tablespoons olive oil


* 1 small onion, finely chopped


* 1/2 small green pepper, cut in thin rings


* 1/2 small red pepper, cut in thin rings


* 2 tablespoons chopped cilantro


* 1 green chili pepper, seeded and finely chopped


* 1 3/4 cups whole kernel corn


* 4 ounces mushrooms, sliced


* salt and black pepper


* 8 fresh cilantro stems, to garnish





Directions


Heat oil in a heavy skillet over medium heat.





Add onion, bell peppers, chopped cilantro and chile.


Cook 5 minutes, stirring occasionally or until soft.


Stir in corn, mushrooms, salt and pepper.


Cook 5 minutes, stirring occasionally.


Transfer to a warmed serving dish and garnish with cilantro.Side-dish recipes with corn and refried beans?
Corn salsas there are variations. You just about need cilantro, lime, onion %26amp; cumin for any authentic dish even salsa.

Black Bean and Corn Salsa Recipe


2 (15 oz.) can black beans ( rinsed and drained)


2 cups frozen corn kernels (thawed)


1 cup chopped red bell pepper


1 cup chopped fresh cilantro


6 tablespoons lime juice


16 small green onions - chopped ( use some of the stem also)


4 tablespoons balsamic vinegar


1 teaspoon salt


1 teaspoon ground cumin


** Optional **


2 small green chili chopped or have used crushed red pepper - go lightly


Mix all the above well. Refrigerate over night to let flavors blend.





Chipotle Corn Salsa Recipe


2 ears very fresh corn


2 vine-ripened tomatoes


1 small red onion, diced


3/4 cup diced red bell pepper


2 jalapeno chiles, minced (save some of the seeds)


2 teaspoons pureed canned chipotle chiles


2 limes, juice of


1 tablespoon olive oil


1/4 cup chopped fresh cilantro


Salt to taste


Remove the husks and silk from the corn and rinse the ears. Simmer the corn in rapidly boiling water for 2 minutes; drain and immediately plunge the ears into a bowl of cold water to stop the cooking. Cut the kernels off the cobs. Cut the tomatoes into the same size dice as the onions and bell peppers.


Combine the corn with the diced and minced vegetables; sprinkle in the reserved jalapeno seeds. Stir in the chipotle puree, lime juice, olive oil, cilantro and salt.








The ultimate is mango salsa but you didn't mention mango.

2 mango, diced small


1 large red bell pepper, diced small


1/2 cup diced red onion, diced small


4-6 T finely chopped cilantro


4 T fresh lime juice


4 T extra-virgin olive oil


2 tsp. ground cumin (or less if you don't like cumin that much)


2 tsp. green Tabasco sauce or your favorite hot sauce (more or less to taste)


2 pinch's sea salt


Chop mango, red pepper, and red onion into pieces about 3/8 inch square, and combine in bowl. Mix lime juice, olive oil, ground cumin, green Tabasco and salt in small bowl, wisk together, and mix into salsa. Add chopped cilantro and stir until combined.
you should put a piece of cornbread on the side and then mix re-fried beans and white beans and chop up bacon and cook it all in a pot then it will taste really good
