Recipes or side dishes using butternut squash?

I have lots of raw butternut squash left ovr from a meal. What can I do with it? What's the best way to cut it up? It's hard as a rock.Recipes or side dishes using butternut squash?
its a recipe website and its really good and i recomend to use it for everthing but i didnt want ot decide which one is for you because it all looked so good to me

Roast it - makes it easier to get the skin off. Then cover with cheese, melt and serve with crusty bread. Yum!

CURRY BUTTERNUT SQUASH SOUP





1 butternut squash


1 onion, minced


1 tsp. butter or oil


2 c. chicken broth


4 c. water


1 tsp. curry powder


Salt and pepper





Cut squash into chunks. In water, boil butternut squash and onion about 25 minutes. Put through blender and puree. Put back on stove and add rest of ingredients. Simmer until heated through.
My son's favorite and so so easy too...


Cut up in large chunks..keeping skin on. Melt butter in a baking pan. Sprinkle the squash with seasonings like...allspice/nutmeg/clove/ a little cinnamon/ a little pepper and brown sugar. Put in butter and bake on 350. While baking ..baste with the butter. Bake until tender. Great side dish for any type of meat.
My favorite is maple roasted...





Cut bnut squash into equal size cubes for easy roasting. Toss in a bowl with a couple of tblspns melted butter, 2 tablespoons brown sugar, and 1/4 cup or so of Pure Maple Syrup. Place in a single layer on a foil lined baking sheet, bake at 350 for approx 30mins or until tender. The squash will carmelize and it's fabulous!!
Cut in half and bake it, than cut it up or mash it and put in a bag and freeze it. I do it with all left over veggies.
Butternut makes a great soup...





1 T butter


1 small onion diced


1 butter nut squash peeled seeded%26amp; diced


1 small potato peeled and diced


5 cup water








melt butter over low heat ...add onions and cook for about 5 mins or until translucent .


add squash,potato%26amp; water.....and cook until squash is very tender.puree in blender....season to taste...
