Need a good/interesting potato side dish recipe.?

I am making dill and cucumber pork chops and need a good side potato dish but have run out of interesting ideas.





Any good recipes, preferably without too much fuss or a zillion ingredients as I really don't want to have to go to the store.Need a good/interesting potato side dish recipe.?
Potato %26amp; Mushroom Scallop


Peel %26amp; slice potatoes 1/8'; thick.


Layer in a covered casserole dish,


with sliced onions %26amp; mushrooms.


Mix 1 can of mushroom soup with 1 cup milk.


Pour over potato %26amp; onion layers to cover.


Cook in 400F oven for 30 minutes or more.


Optionally, sprinkle top with grated cheese.Need a good/interesting potato side dish recipe.?
If you want to stick with the dill try:


Hot dish


Pan fry sliced potato's with butter, dill, salt, pepper, and other seasoning as to your taste. Or place thin sliced potato into muffin cups and season well add a pat of butter and bake for 30 minutes at 400 you can add onion, garlic, or whatever you like to this as well.


Cold


Then you can always make a potato salad using dill, eggs, onion (chives), and diced dill pickles, salt and pepper. With either mayo or olive oil.

ROASTED CAJUN POTATOES


INGREDIENTS


2 1/2 pounds medium red potatoes


1/4 cup olive oil


2 shallots, chopped


1 garlic clove, minced


1 teaspoon salt


1/2 teaspoon paprika


1/2 teaspoon cayenne pepper


1/2 teaspoon pepper


2 tablespoons minced fresh parsley





DIRECTIONS


Cut each potato lengthwise into eight wedges. In a large bowl, combine the oil, shallots, garlic, salt, paprika, cayenne and pepper; add potatoes and toss to coat. Place in greased roasting pan.


Bake, uncovered, at 450 degrees F for 45-50 minutes or until tender and golden brown, turning every 15 minutes. Sprinkle with parsley.








BALSAMIC ROASTED RED POTATOES


INGREDIENTS


2 tablespoons olive or canola oil


2 pounds small red potatoes, quartered


1 tablespoon finely chopped green onion


6 garlic cloves, minced


1 teaspoon dried thyme


1 teaspoon dried rosemary, crushed


1/8 teaspoon ground nutmeg


1/4 cup balsamic vinegar


3/4 teaspoon salt


1/4 teaspoon pepper





DIRECTIONS


In a large nonstick skillet, heat oil over medium-high heat. Add the potatoes, onion and garlic; toss to combine. Add the thyme, rosemary and nutmeg; toss well. Cook and stir for 2-3 minutes or until potatoes are hot.


Transfer to a 15-in. x 10-in. x 1-in. baking pan coated with nonstick cooking spray. Bake at 400 degrees F for 25-30 minutes or until potatoes are golden and almost tender. Add the vinegar, salt and pepper; toss well. Bake 5-8 minutes longer or until potatoes are tender.








ROASTED SPICY MUSTARD POTATOES


INGREDIENTS


1/4 cup Dijon mustard


2 teaspoons paprika


1 teaspoon ground cumin


1 teaspoon chili powder


1/2 teaspoon salt


1/8 teaspoon cayenne pepper


2 pounds small red potatoes





DIRECTIONS


Spray a shallow roasting pan with nonstick cooking spray three times to coat well; set aside. In a large bowl, whisk the mustard, paprika, cumin, chili powder, salt and cayenne. Pierce potatoes with a fork several times; add to mustard mixture and toss to coat. Place in prepared pan. bake, uncovered, at 375 degrees F for 30-40 minutes or until tender.

Slice potatos thinnly, and blanch in boiling water.





Put into a 4 inch deep baking dish. Take 1.5 cups of milk, add a teaspoon of salt and table spoon of flour. Mix well and pour over potatos. The liquid should not overflow the potatos. Slice some cheddar and place on top. Cover the dish with foil or lid and bake for 1.5 hours at 325 degrees.





Tasty side goes well with pork.
';A Canadian'; gave you a pretty good starter recipe. I would take that recipe and add sauteed onions (diced), sauteed red or green bell pepper (diced) for color, and some diced cooked bacon. That would top it off perfectly. Mix it all together and heat until bubbly on either 350潞 or 400潞. My cousin does this recipe each year for her Gingerbread House-Making Party and it's always the first to go.
Party Potatoes





1 lb frozen hash browns (the small cube kind)


1 can cream of mushroom soup


1 cup sour cream


1 cup grated sharp cheddar.





Stir all ingredients together until thoroughly mixed and put into a pyrex baking dish . Smooth over top and bake at 350 for about 45 minutes.
Garlic and dill mashed potatoes. Mash the potatoes with milk, butter, garlic and dill. Place mashed potatoes in muffin pans and bake until tops start to golden brown. Serve with additional butter and sour cream.
My long tme favorite is quite simple: boiled (or steamed) potatoes,smothered in butter (use margerine if you must), add chives, salt, pepper and garlic powder if you like.
