Does anyone have a great ';side dish'; recipe to complement BBQ?

I'm tired of the same old potato and macaroni salad and/or cole slaw. Spicy is OK, easy to make is good tooDoes anyone have a great ';side dish'; recipe to complement BBQ?
Baked Beans





1 lg. Can Baked Beans


1 can Hormel Chili, no beans


1/2 cup Onion, chopped


1/2 cup Green Pepper, chopped


2/3 cup Brown Sugar


3/4 cup Catsup


2 tbs. Mustard


3 tbs. Worcetershire Sauce





Combine all ingredients and bake at 375 degrees for 1 hour.Does anyone have a great ';side dish'; recipe to complement BBQ?
I don';t know what your bbqing but I make old fashioned green beans with bacon onion and potatoes.

1lb-1 1/2 lbs fresh(has to be fresh) green beans 1 lb bacon cut into 1 inch pieces fried til crisp


5-6 russett potatoes diced


2 med onions sliced





Fry bacon until crisp, remove and set aside. boil or steam green beans until almost done. cook potatoes and onion in bacon grease til almost done, add green beans, cook about 5 minutes longer. add crisp bacon, stir and serve.


note: this recipe works best in a nonstick electric skillet.


enjoy-your guests will love it.
I like to wrap the vegetables with foil and put it onto the grill for a while and the taste is wonderful.





Spread the butter on the foil, add salt + pepper, then wrap any of the followings





1) button mushrooms





2) sliced onions





3) sliced garlic (put a lot of butter, when done, pour the mixture onto the bread ...) yummm





I also like to wrap the grilled sirlon steak + kimchee with lettuce leaves, it is spicy and easy! (You only need to get a jar of kimchee and some lettuce leaves with you)

Go to http://www.bbc.co.uk/food/recipes/ they have some awesom recipes from their celebrity chefs...try the polenta and spinash cakes. Sounds yuk, but taste awesome...takes 3minutes to make and your mates will reckon your a real chef.





Ingredients


290ml/1/2pt full fat milk


110g/4oz cornmeal polenta


1 garlic clove, crushed


55g/2oz Irish cheddar, grated


85g/3oz fresh spinach leaves, shredded


4 fresh sage leaves, chopped


salt


freshly ground black pepper











Method


1. In a medium pan, gently bring the milk to a simmer.


2. Stir in the polenta and garlic until it begins to thicken, then stir in the remaining ingredients.


3. Remove the pan from the heat and allow to cool a little.


4. Divide the polenta mixture into four and carefully shape each portion into a ball.


5. Place a griddle pan over a high heat.


6. Flatten each polenta ball into a patty shape.


7. Fry the polenta cakes for 2-3 minutes on each side or until well charred.


8. Serve.
take some butter, add some herbs and cheese, and some corn on the cob...


mix the herbs and cheese in the (softened) butter, and put on the corn on the cob, you can leave the husks on the corn, or remove the husks and wrap in foil and roast on the grill YUM!

waldorf salad, granny smith apples, walnuts, small cubes of cheddar cheese, grapes,celery, and a mayonaise dressing, black pepper and a squeeze of lemon juice mix in amounts to suit your taste, enough dressing to coat.
I suggest corn grilled in the husk.
Corn and Tomato Salad





3 med ears sweet corn (or about 4 cups frozen kernels)


1陆 c grape tomatoes, quartered (about 陆 lb)


1/4 c chopped red onion


2 Tbsp chopped cilantro


2 tsp extra virgin olive oil


2 Tbsp freshly squeezed lime juice


1/8 tsp ground cumin


Kosher Salt


Black Pepper





1. In large pot of boiling water, cook corn until just tender, about 5 minutes.





2. Drain and let cool to room temperature.





3. Cut kernels from ears and transfer to large bowl. Add remaining ingredients and then mix until well combined. Season with salt and pepper to taste. Serve immediately or refrigerate up to 2 hours. Makes 6 (1/2-cup) Servings





Per Serving: 81 cal, 3 g pro, 15 g carb, 2.5 g fat, 0.4 g sat fat, 0 mg chol, 3 g fiber, 14 mg sodium

Asian Peanut Slaw





5 cups shredded green cabbage (about 1 lb)


1/3 cup green onion, sliced on diagonal


1 medium carrot, peeled and shredded


3 Tbsp. natural rice vinegar


2 1/2 Tbsp. peanut butter


2 Tbsp. Splenda Granular or 3 Splenda packets


1 Tbsp brown sugar


2 teaspoons light soy sauce


1 Tbsp. water


1/8 teaspoon red pepper flakes (or to taste)


2 1/2 Tbsp chopped, unsalted peanuts for garnish


Fresh cilantro (optional for garnish)





Place cabbage, onion, and carrot in a large bowl. Vigorously whisk together remaining ingredients in a small bowl until smooth. Pour dressing over cabbage and toss. (This slaw is best served within an hour or so of tossing.) Garnish with peanuts and cilantro. Makes 5 (1 cup) servings.

Big Orange Salad





1 large can crushed pineapple, drained


1 large package orange Jell-o


1 large frozen Cool Whip


2 cups miniature marshmallows


1 pound carton cottage cheese





Mix pineapple and dry Jell-o. Stir until dissolved. Add marshmallows and cottage cheese. Fold in cool whip and spread in a large bowl or 9x13 casserole dish. Cover w/ plastic wrap, and refrigerate for at least 2 hours.

Conniosseur's Casserole





1 12 pz can white shoe peg corn drained


1 16 oz can French cut string beans drained


1/2 cup celery chopped


1/2 cup onion chopped


1 2 oz jar pimentos chopped


1/2 cup sour cream


1/2 cup sharp Cheddar cheese, grated


1 10 3/4 oz can cream of celery soup


1/2 tsp salt


1/2 tsp pepper





Topping:


1 cup Ritz cracker crumbs


1/2 stick butter, melted


1/2 cup slivered almonds





Mix all ingredients except topping. Place in 1 1/2 qt. casserole. Sprinkle topping over casserole.


Bake at 350 for 45 minutes. Serves 8.





(I have subbed water chestnuts chopped for the celery and it is very good.)

Loaded Mashed Potato Casserole





5陆 cups mashed potatoes (about 4 pounds uncooked)


陆 cup milk


8 oz regular or low-fat cream cheese


1 cup regular or low-fat sour cream


2 tsp Prsley Flakes


1 tsp Garlic Salt


1/4 tsp McCormick庐 Ground Nutmeg


3/4 cup shredded Cheddar cheese


陆cup crispy cooked and crumbled bacon (about 12 slices)





1. Place all ingredients, except cheese and bacon, in a large bowl. Beat with an electric mixer on medium-high speed until potatoes are fairly smooth and creamy.


2. Spoon mixture into a lightly greased 13x9-inch baking dish. Sprinkle with cheese and bacon. If you prefer extra crispy bacon, reserve bacon and sprinkle at the end of cooking.


3. Cover and bake in a 350掳F oven 30 minutes or until heated through.


Tip: For faster preparation, start with instant or refrigerated prepared mashed potatoes.

Our family's best side dish is curried eggs. As there are four of us, and we really love curried eggs, we usually cook up at least 2 dozen. They have been a great hit at every BBQ we have ever been to. We are now expected to take curried eggs every time now. Enjoy.
Nothing beats the baked beans on the side.
There are hundreds of things that you can do.... baked beans just suck. Do a


cucumber salad


5 ea cucumbers peeled seeded and sliced


1 red onion julienne


3 Tbsp chopped dill


Dressing:


3 tbsp lemon juice


8 tbsp olive oil (just plain not extra virgin)


salt and pepper to taste





If your grilling or smoking


6 ears of corn cooked over the fire.


sauce


1 stick of butter


4 tbsp olive oil


Juice of 1 lime


4 tbsp of chopped cilantro


1 chipotle pepper (Canned chipotle in adobe sauce)


blend well


Grill corn dip in to sauce





Grilled ancho glazed pineapple


1 pineapple peeled cored and sliced to .5 in thick


sauce


take the sauce from the canned chipotle peppers


8 oz water


1 oz honey


corn starch and water made in to a slurry


heat the water and adobe sauce in pan add more water in not thin enough. add honey and bring to boil add slurry slowly till slightly thickened. \


Grill pineapple ounces flipped brush on the glaze cook for 1 min on each side after glazed then serve.





Just a few thoughts
Cornbread!
My favorite is cucumber salad. The acid in the salad balances the sugar in the BBQ sauce nicely.





CUCUMBER SALAD








You'll need to marinate this salad for at least 2 hours so that the flavors have a chance to develop.





1 English cucumber


1 carrot


1 small red onion


2/3 cup distilled white vinegar


1/4 cup sugar


1/8 teaspoon cayenne





Halve cucumber lengthwise and seed. Thinly slice cucumber and carrot crosswise. Thinly slice onion and transfer to a bowl with cucumber and carrot. In a small saucepan heat vinegar, sugar, and cayenne over moderate heat, stirring until sugar is dissolved. Cool vinegar mixture and pour over vegetables. Marinate salad at least 2 hours and up to 3 days.





Makes about 4 cups.

Baked beans. Either Bush's or take some Van de Kamp pork %26amp; beans add a little mustard ( about 1 squirt), some brown sugar (about 1 tablespoon), with some onions (optional). Mix well and heat.
Easy and tasty bake beans


2 cans of home style bush's baked beans


1 lb of hamburger meat


1 onion


a little brown sugar


a little beer


brown hamburger. cut up onion in small pieces. add it all together in casserole dish. bake on 400 until onions are almost done.











My hubby loves cooking out for the family and my beans always goes fast.

French fries are awesome with bbq. Peach cobbler is my favorite dessert with it (afterwards!) I usually do slaw, fries, or hush puppies, and cobbler. Yum!
